Week 6: Day 4

Another day down, another day healthy. Despite meetings and work and class, I still managed to fit in some time at the gym, event though it was at 9:30 at night. Definitely not the most energizing work out I have ever had, but I am glad I got one done nonetheless.

Breakfast

Broke out the eggs again. This time with spinach and some pepper jack cheese. Nothing exciting, but it was a good way to start my day.

Lunch

This was probably the most random lunch I have had in a real long time. I had work from noon to 2, so I had a banana and a Luna bar as a snack. And then when I was done with work I had some ham and pickles. None of this went together, and none of it made sense, but it curbed my hunger until dinner. Sometimes you just gotta make it work.

Dinner

A nice fresh dinner to end my day. Chicken, pepper jack cheese, tomato, lettuce and crouton wrap. Nothing fancy, but definitely tasty. Again not a lot of time for a meal, but I made it work.

Buffalo Chicken Quesadilla Recipe

You could put buffalo sauce on pretty much anything and I would eat. Add chicken and it makes it one of the perfect combos. Hence, buffalo chicken quesadillas are a pretty constant meal choice for me. I am all about quick and easy meals, and this definitely fits that bill.

ingredients

Serves 1

  • 2 tortillas
  • About 3/4 cup shredded cheese (your choice)
  • 1/2 chopped tomato
  • 1 chopped scallion
  • 1/2 cup small grilled chicken pieces
  • Buffalo sauce as desired

Week 4: Day 5

Today was a tough one. I don’t know if it is the weather or the impending hell I know this weekend will be, but I am in need of some inspiring motivation. I did find this water bottle and this water bottle and have decided to buy one. Very cute, and I know I need to be drinking more water throughout the day, so I hope it helps.

Breakfast

Another broccoli omelette. This time with colby jack instead of pepper jack cheese; so exciting. I think I should go back to making my breakfasts ahead of time. It seemed to work better, and I definitely enjoyed them more. The key is finding breakfast recipes I like and are healthy. Any suggestions are welcomed!

Lunch

I hit up that leftover egg and olive (egg salad) from yesterday. It hit the spot again.

Dinner

If you haven’t been able to tell yet, I am a big fan of buffalo, so this is one of my go-to dinners. I made a buffalo chicken quesadilla for dinner and it was spot on. The picture doesn’t do it justice.You can find the recipe here.┬áIt is my three favorite things: easy, quick and tasty.
